Roasted Capretto

This roasted capretto recipe will make your taste buds dance with joy. Capretto is a young goat meat that is tender and rich in flavor. This Italian recipe is perfect for special occasions or when you want to indulge in something delicious.
Ingredients
- 1 capretto, cleaned and quartered
- 6 cloves garlic, minced
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 3 tbsp chopped fresh rosemary
- 3 tbsp chopped fresh thyme
- 2 tbsp fresh lemon juice
- 1 tbsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 350°F.
- In a large bowl, whisk together garlic, olive oil, red wine vinegar, rosemary, thyme, lemon juice, salt, and black pepper.
- Add capretto to the bowl, turning it to coat all sides with the marinade. Cover and let it sit at room temperature for 30 minutes or in the refrigerator overnight.
- Place the capretto on a wire rack set inside a roasting pan, brush with any excess marinade, and roast for 1 hour and 30 minutes, checking every 30 minutes and brushing with more marinade as needed.
- Once capretto is tender and cooked, remove from the oven and let it rest for 10 minutes before carving and serving.
This roasted capretto is a perfect dish to serve with roasted vegetables, rice, or potatoes. Pair it with a glass of red wine and enjoy the flavors of Italy.
