Roasted Capretto

This roasted capretto recipe will make your taste buds dance with joy. Capretto is a young goat meat that is tender and rich in flavor. This Italian recipe is perfect for special occasions or when you want to indulge in something delicious.

Ingredients

  • 1 capretto, cleaned and quartered
  • 6 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 tbsp chopped fresh rosemary
  • 3 tbsp chopped fresh thyme
  • 2 tbsp fresh lemon juice
  • 1 tbsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together garlic, olive oil, red wine vinegar, rosemary, thyme, lemon juice, salt, and black pepper.
  3. Add capretto to the bowl, turning it to coat all sides with the marinade. Cover and let it sit at room temperature for 30 minutes or in the refrigerator overnight.
  4. Place the capretto on a wire rack set inside a roasting pan, brush with any excess marinade, and roast for 1 hour and 30 minutes, checking every 30 minutes and brushing with more marinade as needed.
  5. Once capretto is tender and cooked, remove from the oven and let it rest for 10 minutes before carving and serving.
